The Best Chicken Cordon Bleu

This classic Chicken Cordon Bleu recipe combines a family favorite with a Valentine twist. Delicious enough to feel like a tasty, comfort food, but really quite healthy. This Chicken Cordon Bleu recipe is perfect for a date night or dinner for two but can easily be adjusted below for a larger family.

Ingredients for Chicken Cordon Bleu

  • Olive oil or other oil to brown the chicken before assembling.
  • 1/2-pound of boneless, skinless chicken breasts. If making this for a family of 4, use a pound of chicken breasts.
  • 1 tomato
  • 3 oz. cordon bleu cheese
  • 1 1/2 oz. mozzarella cheese for decoration
  • 1 egg
  • 5 tbsp. sour cream
  • 1/2 tsp each of coriander, garlic powder, and smoked paprika
  • Some thyme, salt to taste

How to make Chicken Cordon Bleu

Grab your favorite knife (mine are these Henckel knives) and cutting board, cube the chicken, and place in a pan with olive oil and pepper. Brown on each side.

If you are like me, I love the flavor of grilled chicken cordon bleu. So if you do too, grill the chicken first and reduce the cooking time by 15-25 minutes.


Transfer the chicken to a greased heart-shaped casserole dish, if you have one. If you don’t, here is my favorite. Sprinkle with seasonings.

Chicken cordon bleu casserole

Chop tomatoes and place a layer on top of the chicken.

Mix together the egg, sour cream, and pinch of salt until smooth.

Pour the egg mixture over the chicken, coating evenly.

Freshly grate and sprinkle the bleu cheese over the mixture in the casserole dish.

Bake for 1 hour at 350°F (or less if you grilled the chicken.)

Check after 35 minutes, the Chicken Cordon Bleu Casserole should start smelling amazing about now!

Cut the mozzarella slices into heart shapes (Pro Tip. Use heart-shaped cookie cutters) and brush each side with a bit of oil. Fry them for 1-2 minutes per side in an oiled pan.

Decorate the casserole with the hearts and garnish with the dried parsley.

This homemade casserole has a deliciously tangy taste with a tender and soft texture. This makes a romantic Valentine’s dinner.

You can get creative and season with your own blend of favorite seasonings!

You may also want to skip the salt, since the cheeses are naturally salty.

Tip: be careful with the salt; cordon bleu cheese is quite salty.


Ingredients

  • Olive oil or other oil to brown the chicken before assembling.
  • 1/2-pound of boneless, skinless chicken breasts. If making this for a family of 4, use a pound of chicken breasts.
  • 1 tomato
  • 3 oz. cordon bleu cheese
  • 1 1/2 oz. mozzarella cheese for decoration
  • 1 egg
  • 5 tbsp. sour cream
  • 1/2 tsp each of coriander, garlic powder, and smoked paprika
  • Some thyme, salt to taste

Instructions

  1. Preheat oven to 350°F.
  2. Cut the chicken into small pieces.
  3. Place the chicken in a pan with a little bit of olive oil (or whatever oil you like to use) and sprinkle with pepper. Brown the chicken for a few minutes on each side. We just want to get a little color; the chicken does not need to be fully cooked.
  4. Grease the casserole dish and put the pieces of chicken into the casserole dish. Salt and sprinkle with spices. We have listed coriander, smoked paprika, garlic powder, and thyme. However, use your preferred seasonings. Make an even layer of chicken in the pan.
  5. Cut the tomato into small pieces and place the tomato on top of the chicken.
  6. Mix the egg and sour cream in a bowl, add a pinch of salt. Stir until smooth.
  7. Pour this egg mixture over the chicken, coating evenly.
  8. Grate the bleu cheese on a grater. Sprinkle over the casserole.
  9. Bake in a 350°F oven until golden, about 1 hour.
  10. Cut the slices of mozzarella cheese into heart shapes, brush each side with a bit of oil, and fry them for just a minute or two in an oiled frying pan.
  11. Decorate the top of the casserole with the cheese hearts. Sprinkle with dried parsley and serve.
