Looking for a fun way to surprise your husband, kids, or friends this Valentine’s Day? These Strawberry Buttercream Surprise Cupcakes are delicious, adorable, and easy, too! Recipients of these Valentine’s Day-inspired cupcakes are sure to be delighted with the surprise inside–an edible “confetti” of sprinkles! If you have kids who love to bake, this would be a really fun one to make (and eat!) with them!
And while this cute pink cupcake just screams “Valentine’s Day,” you could easily adapt this recipe to use for all kinds of holidays from Independence Day to birthdays or even Christmas by varying the type of cake mix and the kinds of sprinkles you use. So get creative and have some fun creating these holiday cupcakes and sharing them with the people you love!
For the Cupcakes:
Note: While you are certainly welcome to use a from-scratch recipe, these “surprise-inside” cupcakes are easiest to make using a strawberry cupcake mix. Do you follow a gluten free lifestyle (like I do)? No problem! This mix makes great cupcakes, and you can add fresh strawberries (or pink food coloring) right to the mix!
First, bake your cupcakes according the instructions on the package. After they’ve cooled completely, remove a small section from the middle of the cupcake with a knife or a scoop. (Be sure you don’t scoop all the way to the bottom of the cupcake. You’ll need to leave the bottom intact.)
Next, fill the hole with sprinkles. If you like, use part of the section you scooped out to put a “lid” on the hole. If not, you can just put icing over the top of the hole.
While your cupcakes are baking and cooling, it’s time to make your homemade buttercream icing.
For the Frosting:
Even if you use a box mix for the cake part of the cupcakes, this delicious buttercream and strawberry frosting makes this cupcake taste completely home-made! The bright pink color makes it extra fun, too.
First, beat your softened butter and strawberry preserves until fluffy and well- combined.
Add one cup of powdered sugar at a time, alternating with one tablespoon of milk at a time until desired consistency is reached. (You want it to be thick, but not paste-like!)
Add red food coloring until desired shade of pink is reached. To me, nothing says “Valentie’s Day” like a bright cheery pink!
Last, cover your cupcakes with your buttercream icing. You can use a knife or a piping bag to do this. If you feel like going the extra mile, you can put a few sprinkles on top, or add a slice of strawberry!

strawberry cake mix with ingredients needed for preparing
1 cup (2 sticks) butter (room temperature)
1/2 cup strawberry preserves
4 cups powdered sugar
4 tablespoons milk
red food coloring
Bake cupcakes according to directions on package.
After cupcakes are completely cooled, scoop out a small section from the middle of the cupcake (making sure to leave the bottom of the cupcake intact).
Fill the hole with sprinkles. (You may use some of the part you scooped to make a “lid” for the hole, or you can leave the hole and cover it with icing.)
Beat butter and strawberry preserves until fluffy and combined.
Add one cup powdered sugar at a time alternating with one tablespoon of milk at a time until desired consistency is reached.
Add red food coloring until desired shade of pink is reached.
Cover cupcakes with buttercream icing.
