Easy Bacon Stuffed Mini Peppers

You know when you’re invited to a get together or family event and you want to bring something that’s a little more special than chips and dip (and a little more healthy, too)? This recipe is one of my go-to favorites for exactly that. These Easy Bacon Stuffed Peppers are delicious, with a fresh crunch of peppers and a rich, creamy filling.  This recipe is also a great appetizer option if you feel like getting a little bit fancy at home without too much effort (at home date night, anyone?) One more great thing about these Bacon Stuffed Peppers: they’re low carb and gluten free! That means that even if you, or your host/hostess have certain dietary restrictions, everyone can still partake and enjoy. Read on to learn how to make this quick, easy and tasty appetizer.

The first thing you’ll do for this recipe is prep your mini peppers. I’ve found that the easiest way to do this is simply to slice them in half and use a spoon to remove any seeds. You can usually find these mini peppers in a large bag in the produce section of the grocery store. One large bag of peppers will usually yield about 32-36 prepared halves. Once you’ve prepared them, lay the halves out so that they are ready to fill!

Next, you’ll make the cheesy, savory filling by place the cream cheese, chopped and cooked bacon, cheddar cheese, and mayonnaise in a large medium bowl. Stir everything together until the ingredients are well-combined.

Note: set aside a small amount of chopped bacon for the garnish.

Once your filling is ready, you can either spoon it into the peppers or use a piping bag to fill the peppers with the mixture.  (You can also use the time-tested ziplock-with-a-hole method if you don’t have piping bags available).

Place your peppers on your serving dish and let them chill in the refrigerator for at least 30 minutes so that the flavors can all marry together. Before serving, garnish your peppers with chopped bacon and a little bit of parsley. Enjoy!

Description

These Easy and Delicious Bacon Stuffed Mini Peppers offer a fresh crunch combined with a rich, creamy filling.  These make a great appetizer option for special events. Bonus: they are gluten free and low carb, too!


Ingredients

1 package mini bell peppers, cut in half and deseeded

1 8-ounce package cream cheese, room temperature

5 strips bacon, cooked and chopped

1 cup shredded sharp cheddar cheese

1/3 cup mayonnaise


Instructions

  1. Place the cream cheese, bacon, cheddar cheese, and mayonnaise in a large medium bowl. Stir to combine.
  2. Spoon or pipe the mixture into the pepper halves. Place in refrigerator to chill for at least 30 minutes.
  3. Garnish with chopped bacon and parsley flakes before serving (optional).
