Berry Delicious Breakfast Bars: Perfect for On-the-Go!

You know how some mornings you just need a quick breakfast that you can grab and go?  It’s way too easy to sacrifice good nutrition or delicious taste in those situations. With kids, it can also be hard to get them to eat a breakfast that is going to give them the fuel they need for the day ahead.  For just such mornings, we’re bringing you this gorgeous. chilled breakfast bar. It’s packed with protein-laden yogurt, lots of fresh berries, and crunchy granola for energy!

One of my favorite things about this recipe is that you can prep in large batches ahead of time. You store the bars in the freezer so that they are easy to grab on your way out of the door.

Personally, I also like having the option of a chilled breakfast over a hot one! (I live in Mississippi, where it’s hot and humid about half the year). I also know a lot of people who feel a like a big or warm breakfast makes them queasy in the morning. If that’s you, this might be a good alternative option!

In making these breakfast bars, feel free to tweak each component to make it work best for you. If you need to sub one homemade part of this recipe for a store-bought option, it’s still going to result in a great breakfast that will enhance the flow of your mornings!

The Granola

Golden, honey-infused granola is a great incentive to get out of bed in the morning! In this recipe, granola acts as the sturdy base of the breakfast bar and provides a delicious crunch.  While you can totally use your favorite store-bought granola for this part, making your own is extremely satisfying. If you love granola and eat a lot of it, knowing how to make it yourself can also save you some money in the long run!

To start out, pre-heat your oven to 350 degrees and line a cookie sheet with parchment paper.  Then, measure out your oatmeal and place it in the center of the parchment. Add the honey, brown sugar, cinnamon, maple syrup and vanilla. Finish it off with just a pinch of salt and then mix all of the ingredients together with your freshly washed hands (you’ll need to wash them again when you’re done because it’s messy!)

Spread your granola concoction out into a thin layer on the parchment paper and bake in the oven for about 10-15 minutes. The granola should look golden brown and have a crunchy texture. At this point, your kitchen should smell fantastic.

Once your granola is done, remove it from oven. Next, lift the parchment paper from the baking sheet and rest it on top of a wire rack to cool.

While the granola is cooling might be a good time to rinse your blueberries, blackberries and raspberries. I always do this in a colander, using cool water. Then place your berries gently onto paper towels to dry.

After you’ve rinsed your berries, check on the granola. Has it cooled down to the touch? If so, line the bottom of your 9 X 9 pan with parchment paper and use your finger to gently press the granola evenly into the pan. Place this in the freezer to give it a chance to set up for the base of your breakfast bars.

The Berry Yogurt

For this step, you are essentially going to use the same process three times in order to create three different, berry-rich yogurts. This gives these bars a complex flavor profile and also makes them extra beautiful. It’s also really easy to do.

Blueberry Yogurt

In a bowl, combine blueberry yogurt, blueberries, vanilla, sugar and honey (see exact amounts in recipe at the end of post).

Blackberry Yogurt

In a second bowl, combine blackberry yogurt, blackberries, vanilla, sugar and honey (see exact amounts in recipe at the end of post).

Raspberry Yogurt

In a third bowl, combine raspberry yogurt, raspberries, vanilla, sugar and honey (see exact amounts in recipe at the end of post).

*Note: don’t use up all of your berries in the yogurt mixtures, you’ll want to set some aside for the next step.

Putting it all together

When you’ve prepared all of the components, you are ready to put them all together! First, remove the pan with the granola from the freezer. Then, spread a layer of the blueberry mixture over the top. Follow this with a later of the blackberry mixture.  Next, you will spread the raspberry yogurt on top. Lastly, sprinkle the remaining berries on top.

Cover your dish with foil and freeze the bars overnight. The next morning you can cut them into beautiful bars (usually 2 X 3 is a good serving size)!

Berry Delicious Yogurt Breakfast Bars

These beautiful breakfast bars are packed with a balance of protein, carbs and antioxidant-rich berries to get your day started out with a burst of delicious nutrition. These are great to prep ahead of time for busy mornings when you need to be well-nourished! Kids love them, too!


2 cups of vanilla yogurt
2 cups of blueberry yogurt
2 cups of raspberry yogurt
3 teaspoons of vanilla divided
1 pint of fresh blueberries – rinsed and drained
1 pint of blackberries – rinsed and drained
1 pint of raspberries rinsed and drained
6 Tablespoons of granulated sugar – divided
3 Tablespoons of honey – divided
4 cups of oatmeal
1/4 cup of honey
1/2 cup of brown sugar
1 Tablespoon of cinnamon
2 Tablespoons of maple syrup
1 teaspoon of vanilla
pinch of salt
Other items needed:
Parchment paper
Cookie sheet
9 X 9 square dish


  • Line a cookie sheet with parchment paper, and preheat the oven to 350 degrees. 
  • Place the oatmeal in the center of the parchment paper. 
  • Add the honey, brown sugar, cinnamon, maple syrup, vanilla, and a pinch of salt on the top of the oatmeal.
  • With clean hands, mix the granola together until well-blended. 
  • Spread out in a single layer on the parchment paper. 
  • Bake for 10 – 15 minutes, or until the granola is golden brown and crunchy. 
  • Remove from the oven, and allow to cool on a wire rack.
  • While the granola is cooling, rinse the blueberries, blackberries, and raspberries in a colander under cool water.
  • Turn out on to paper towels to drain. 
  • When granola has cooled to the touch ( but still warm)  line the bottom of the 9 X 9 pan with parchment paper, and press the granola evenly into the pan. 
  • Place in the freezer. 
  • In a bowl, add the the blueberry yogurt, half the pint of blueberries, 1 tsp of vanilla, 2 Tbs of sugar, 1 Tbs of honey.
  • Mix well and set aside. 
  • In another bowl, add the vanilla yogurt, half of the blackberries, 1 tsp of vanilla, 2 Tbs of sugar and 1 Tbs of honey. Mix well and set aside. 
  • In a third bowl, add the raspberry yogurt, half of the raspberries, 1 tsp of vanilla, 2 Tbs of sugar and 1 Tbs of honey. 
  • Mix well and set aside. 
  • Remove the granola from the freezer, and spread the blueberry yogurt mixture on top of the granola.
  • Spread the vanilla/blackberries mixture on top of the blueberry layer.
  • Lastly, spread the raspberry mixture on top of the vanilla layer. 
  • Sprinkle the remaining blueberries, blackberries, and raspberries on top of the last layer.
  • Cover with foil, and place in the freezer overnight.  The next morning, remove blueberry bars from freezer, cut into 2 X 3 inch bars, and serve.  Enjoy!
