This recipe takes a couple of detours from traditional fudge that make it quicker and easier to create.  Instead of melting your own sugar or keeping a close eye on the stovetop, this recipe uses white chocolate chips and pre-made strawberry frosting. The inclusion of real, dehydrated strawberries adds fresh strawberry flavor and a fun, textural component.  Because are not knives or stove tops to worry about, this recipe is a perfect choice for cooking with young children.

To get started, you’ll take your freeze-dried strawberries and put them in a plastic bag. Then crush them up (kids love help with this part!) Next, put the white chocolate chips in a medium-sized bowl and melt them in 30 second bursts, until they are completely
melted and smooth. Do not cook for more than 30 seconds at a time or you will burn them.

When the white chocolate chips are completely melted, stir the chocolate and fold int he strawberry frosting.

Next, fold in the crushed strawberries. Prepare a 8 x 8 pan with cooking spray and then cover the bottom and sides of the pan with the parchment paper.

Spread your strawberry mixture evenly into the pan. If you like, add some festive, Valentine’s Day sprinkles to the top of the fudge and then stick the pan in the refrigerator until fudge is firm.

When your strawberry fudge is firm, remove it by lifting out the parchment paper. Place the large block of fudge on a cutting board and cut it into 1-2” pieces. Enjoy!

This easy strawberry fudge would make a sweet Valentine’s gift! You could even present it in a cute dessert box tied with pink and red ribbon!
