Description

A homemade pumpkin seed flax granola recipe loaded with healthy ingredients & sweetened with fruit. Perfect for adding to yogurt, smoothies or snacking.


Ingredients

4 cups whole grain oats – I like Bob’s Red Mill
1 cup pumpkin seeds
1 cup organic raisins
⅓ cup flax seeds
to 1 cup dried apples
1 tsp of my homemade pumpkin pie spice mix
4 TBSP coconut oil

Instructions

  1. Mix all ingredients in a large bowl, except the oil. Be sure to evenly coat the granola with the spices.
  2. Once well coated then stir in melted coconut oil and toss until lightly covering all the granola. It should all get soaked up leaving a very light coating that is barely noticeable. Your granola should never be greasy so start slowly.
  3. Bake on a baking sheet at 350 degrees for 20 minutes tossing every 5 minutes till golden. Do not let scorch!
  4. Let cool.
  5. Store in an air tight container.

Notes

To make your granola stick together, stir together 1/4 cup honey, 1/4 cup of maple syrup, 1/4 cup coconut oil and 1/2 tsp salt. Warm these ingredients for a few seconds to help them mix better!
