Keto French Onion Meatballs

One of the things that people love most about the Keto lifestyle, aside from the fact that it can melt excess pounds off, is that you can enjoy some really delicious and satisfying foods while following this low carb, high fat diet.

Savory meats? Check. Delicious, creamy sauces? Yep. Rich, decadent flavors? Absolutely.  Today’s recipe for Keto French Onion Meatballs contains all of the above! It has all of the delicious flavors of a classic French Onion Soup contained in a meaty entree that will satisfy everyone’s appetite! Bonus: you can whip this delicious, low-carb dinner up in about 30 minutes!

To start making your Keto French Onion Meatballs, heat some olive oil in a large skillet over medium-high heat on the stove. Once the oil is hot, add your finely sliced onions to the skillet. You’ll want to cook them until they begin to brown and soften. The flavor of caramelized onions really makes the dish! Then remove the onions from the skillet and set aside (don’t clean your pan yet though, because you want to make use of the cooked onion flavor later).

Next, you’ll start working on the meatballs! In a mixing bowl, combine the ground beef, pork rind crumbs, egg, french onion soup mix, 2 oz. of the shredded Gruyere cheese as well as salt and pepper to taste.

Tip: Did you know that crushed pork rinds make a great non-flour binder for Keto-friendly meatballs (and meatloaf, too)? It’s also a good ingredient to use in those recipes if you are gluten-free!

Mix all of the ingredients together with your hands until everything is well-combined.  Next, you’ll form the meat mixture into 30, evenly-sized meatballs. If you have kids who like to help out in the kitchen, this is a fun job for them! Once you have your meatballs formed, place them into a heated skillet on the stove and cook them thoroughly until they are evenly and completely cooked through.

Remove the meatballs from the skillet when they’ve cooked all the way and transfer them over to a plate temporarily. Then add chicken or beef broth to the still-hot skillet, using it to help you scrape up loose bits from the pan (those loose bits are delicious and ultra-flavorful.) Whisk the heavy whipping  cream into the skillet until it combines with the broth and the other flavors in the pan. This makes a really delicious, Keto-friendly gravy to go over your meatballs.

Right before serving, place your onions and meatballs into the warm skillet and toss them together with the sauce before serving.

Ingredients

1 ½ lbs. Ground beef

½ C. Crushed pork rind crumbs (about 2 oz. crushed)

1 Egg

2 Tbsp. French onion soup mix

3 oz. Gruyere cheese shredded and divided

½ Medium onion sliced thinly

1 Tbsp. Olive oil

C. Chicken or beef broth

¼ C. Heavy whipping cream

Salt and pepper to taste


Instructions

Heat the olive oil in a large skillet over medium-high heat on the stove.

Add the sliced onions to the skillet, and cook until they begin to brown and soften. Remove the onions from the skillet and set aside.

In a mixing bowl, combine the ground beef, pork rind crumbs, egg, french onion soup mix, 2 oz. of the shredded gruyere cheese as well as salt and pepper to taste. Mix together well with your hands until well combined.

Form the meat mixture into 30 evenly sized meatballs.

Place the meatballs in the heated skillet on the stove, and cook, turning to brown evenly until completely cooked through.

Remove the meatballs from the skillet when finished.

Add the chicken or beef broth to the skillet, and scrape the bottom to loosen any bits.

Whisk the heavy whipping cream into the skillet until well blended.

Place the onions and meatballs back into the skillet, and toss to coat before serving.
