Keto Chocolate Covered Strawberry Fat Bombs

Are you on a mission to lose weight this year too? I’m finding that, in order to lose weight, I need to eat high fat and low carb. In other words: keto has been the only thing in the last few years that I  have actually lost weight on. I’m not sure if this is due to being in menopause or my Hashimoto’s diagnosis, but either way, this is a life-style I’m embracing! So, I’ll be sharing lots of recipes this year that focus on this style of eating. These Keto Chocolate Covered Strawberry Fat Bombs are the first of many! They are perfect for when you need something sweet and satisfying. And while chocolate + strawberry is a great combination any time, these would make an especially perfect Valentine’s Day treat for those of you following the keto lifestyle.

If you have never tried a fat bomb, NOW is the time to try them! They are so good. Seriously, my kids try to hijack them from me… they are THAT good. Plus, they are really helpful on keto as they provide fat-fuel for your body while being super convenient to grab and go.

These fat bombs contain the delicious flavors of strawberry and chocolate! To make them, you’ll first beat together your (softened) cream cheese with a mixer until it starts to get fluffy. Next, add in butter, vanilla, Swerve, strawberries, and coconut oil. You can use either granulated or powdered Swerve, but I find that the powdered blends much more easily!

Strawberries are a great addition to add (in small quantities) to keto fat bombs and desserts. They have about 1 carb per strawberry, which means that incorporating a few into a batch of something won’t break your carb budget. Before you mix your strawberries into the other ingredients, you’ll want to chop them up (not shown) so that they mix in more easily.

Mix everything with beaters until well blended.

Press mixture firmly into candy molds. You can go with a truffle-style silicone mold like this the one I used here. However, if you are making these for Valentine’s Day, you may want to go with this fun “Hearts and Flowers” design. When you’re doing keto it’s fun to have a variety of  different silicone molds on hand.

Once you’ve smoothed the mixture down into the molds, place the silicone trays into the freezer for about an hour. After this amount of time, they should be pretty solid, and you can just pop them out.

But you’re not quite done yet, because it’s time for the chocolate drizzle!

Melt your sugar-free chocolate of choice in the microwave.  Especially if you are following the keto diet, you can’t go wrong with Lily’s sugar free chocolate!  Using a spoon, drizzle the melted chocolate over the tops of the fat bombs.

Pop them into the freezer again for about 10 minutes to allow the chocolate time to set.

Enjoy!  These are very rich and decadent, so you might not want to eat several at once. Instead, I recommend storing them in the freezer in an airtight container until you’re in need of a treat/boost. Then grab one and enjoy it! They are great frozen or slightly thawed!

Ingredients:

  • 1 pkg. 8oz Cream Cheese (softened)
  • 1 stick Butter (softened)
  • 1 teaspoon of Vanilla
  • 1/4 cup of  Swerve Sugar
  • 3 tablespoons of Coconut Oil
  • 1 cup of Fresh Strawberries
  • Candy Molds
  • Sugar Free Dark Chocolate

Instructions

  1.  Start by beating your cream cheese with a mixer until fluffy.
  2. Add in butter, vanilla, swerve, strawberries and coconut oil.
  3. Mix until well blended.
  4. Press mixture firmly into candy molds.
  5. Place in freezer for one hour.
  6. Pop out of molds.
  7. Melt chocolate down and drizzle over fat bombs.
  8. Freeze again for 10 minutes.
  9. Serve and enjoy!

Notes

*Melts at room temperature.
