Homemade Vanilla Ice Cream (Only 5 Ingredients!)

It may be mid-August, but it’s still HOT out there, folks. When the heat has got me feeling like I need a shower after the short walk to the mailbox, I find myself thinking about ice cream. Not just any ice cream, but the home-made ice cream of my childhood: rich, soft, frosty, and full of that real vanilla flavor.

My great grandmother used to make homemade vanilla ice-cream for the whole family during the hot summer months we would visit. To this day,  her old-fashioned ice cream maker sits atop my refrigerator at this moment, reminding me of those times.  Despite the fact that most of us buy ice cream in the store these days, great homemade ice cream is not that hard to make! It also has a distinctive taste and texture that I have yet to find for sale in a store.

If you are looking for a wonderfully tasty, cold treat that is full of nostalgia, you will love this 5 ingredient recipe for  homemade vanilla ice cream!

You will need an ice cream maker for this recipe, but I honestly think it’s worth the investment if you love homemade ice cream. My family enjoys making and serving homemade ice-cream for all of our big celebrations: birthdays, holidays, etc.  It’s an easy way to create a special dessert that everyone will enjoy.

To start making your homemade ice cream, beat two eggs with an electric mixer for about 1 minute.  In addition to giving your ice cream a delicious, custard-y flavor, the eggs also help it stay creamy while it freezes (and as it begins to soften again at room temperature). Once your eggs are foamy and light, begin to add in the sugar, slowly.

Continue to mix with the electric mixer and begin to add in the cream, vanilla and milk until all of your ingredients are combined.

Once all of the ingredients are combined, pour them into your ice cream maker (this one is my favorite) and let it work its freezing magic (according to the particular brand’s instructions).

In about 30 minutes, the result will be delicious, soft-serve vanilla ice cream.

 

Some people like their ice cream a little firmer, more like the kind you would buy in the store. All you have to do to achieve a more solid texture is to transfer your ice cream into a freeze-safe container and pop it into the freezer for 4-6 hours.

Description

This recipe for old fashioned vanilla ice cream will cool you off and bring back happy childhood memories! It only takes 5 ingredients and less than an hour to make this delicious, homemade vanilla ice cream!


Ingredients

Scale

2 large eggs

¾ cup sugar

2 cups heavy cream

1 cup whole milk

1 teaspoon vanilla extract


Instructions

  1. Beat eggs with electric mixer until light and foamy, about 1 minute.
  2. Slowly add the sugar and continuing mixing until blended.
  3. Add cream, vanilla, and milk, blending until combined.
  4. Pour into ice cream maker and freeze according to manufacturer’s instructions.
  5. For firmer ice cream, transfer ice cream to a freezer-safe container and freeze for 4 to 6 hours.

Make 1 quart liquid and about 1 ½ quart frozen.

In the Cuisinart Ice Cream 2 quart machine, this takes approximately 30 minutes to freeze into soft serve.

    1. If you’re concerned about using raw eggs in this recipe, you can substitute Egg Beaters (from your grocery store) instead. Egg Beaters are found in the dairy aisle at most grocery stores.
