Need an easy weeknight meal for the family? Everyone in the house loves the flavor of my One Pot Spinach Parmesan Pasta. Give it a try.

  • 10 oz. spaghetti
  • ½ cup onion diced
  • 1 diced green pepper diced
  • 10 ¾ diced tomatoes
  • 2 cups chicken broth
  • 8 oz. frozen spinach
  • ½ cup Parmesan cheese
  • 23 cloves garlic crushed
  • 1 tsp. Oregano
  • ½ tsp. salt
  • 1 tsp. Black pepper
  • 1 ½ tsp. Olive oil

Instructions
  1. Place onions, green pepper, garlic, and olive oil in a large pot over medium heat. Saute until softened and they begin to become translucent.
  2. I like to buy pre-diced bags of mixed peppers and onions in the frozen section at Walmart-it saves time and they are very cost effective.
  3. Add canned diced tomatoes, broth, oregano, salt, and pepper-bring to a boil on high.
  4. Break pasta in half and place in liquid, when fully submerged cover with lid and reduce heat to a simmer.
  5. Stir in frozen spinach and parmesan cheese. If you are adding meat, this is the time to stir it in as well.
  6. Simmer for 7-8 minutes or until pasta is softened and almost all the liquid has been absorbed.
  7. Serve immediately with a fresh sprinkling of Parmesan cheese.
