Delicious Keto Strawberry Macadamia Nut Cookies

Even if you’re not on a keto or low carb diet, you may still love them! These keto strawberry macadamia nut cookies really are delicious!! So many keto-friendly desserts are fat bombs. Fat bombs can be yummy, but sometimes even those who eat keto want a cookie! You won’t be disappointed with these. I absolutely love them!

Ingredients for Keto Strawberry Macadamia Nut Cookies

You probably have many of these ingredients on hand already if you eat keto or low carb. You’ll need almond flour, erythritol, unsalted butter, vanilla extract, almond extract, macadamia nuts, and fresh strawberries. Sounds delicious already, doesn’t it?

Preheat the oven to 350 while you gather your ingredients.

Put your melted butter into your mixing bowl.

Now add the erythritol.

And then add both the vanilla and almond extracts. Once all of these ingredients have been added, beat until smooth.

Add the almond flour and mix until combined. The dough will be crumbly and moist.

Then fold in the macadamia nuts.

Then add your chopped strawberries. Be careful to fold them in without mashing them or over-mixing.

Form the dough into 10 equal-sized balls and place them on a parchment-lined baking sheet.

Flatten the balls into cookie shapes, and shape the edges together with your hand as you flatten them. Then bake for 10-12 minutes until lightly browned on the edges and cooked all the way through.

These delicious cookies are a little different than ordinary keto treats. If you eat low carb or keto and you’re craving cookies, try them out! We think you’ll love them!


Ingredients

  • 1 c Almond flour
  • ½ c Erythritol
  • ¼ c Butter melted and unsalted
  • 1 tsp Vanilla extract
  • ½ tsp Almond extract
  • ½ c Macadamia nuts
  • ½ c Chopped fresh strawberries

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a mixing bowl, beat together the melted butter, erythritol, vanilla and almond extracts until smooth and creamy.
  3. Add in the almond flour and mix until combined into a crumbly moist dough.
  4. Fold in the macadamia nuts.
  5. Gently fold in the chopped strawberries. Be careful not to over-mix or mash them.
  6. Form the dough into 10 equal-sized balls and place them on a parchment-lined baking sheet.
  7. Flatten the balls into cookie shapes, and shape the edges together with your hand as you flatten them.
