Discover your new favorite autumn soup! This rich and creamy pumpkin soup makes a hearty, healthy and delicious lunch, dinner or side dish. It’s also incredibly easy and takes less than 20 minutes to make!
Ingredients
15 ounce can of pumpkin puree
4 cups of chicken broth
1/2 tsp salt, or to taste
1/2 tsp pepper, or to taste
1/2 tsp garlic powder
3 sprigs of fresh thyme
1/2 cup of heavy cream
Instructions
1. Add all of the ingredients, except for the heavy cream to a medium pot over medium high
heat.
2. Bring to a boil and reduce heat to a steady simmer, and cook for 8-10 minutes, stirring
occasionally.
3. Remove pot from heat and add in cream.
4. Mix and serve.
Notes
*If you’d like to add toppings to your soup, the following are all great choices:
-grated ginger
-pumpkin seeds
-finely grated nutmeg
-ground cinnamon
-smoked paprika
-additional thyme
