This yummy, festive appetizer is surprisingly budget-friendly and requires minimal prep time. Even though they are perfect party food, these chicken salad bites are so easy that you can throw them together anytime you want!
First, you’ll need to whip up your chicken salad. We all have our own favorite recipe for this classic cold dish. Some people like to add fruit and nuts. Others adore sweet pickle and onion. My version includes the addition of pepperoncini. This mild, Italian pepper adds some freshness and textural diversity to the salad.
I also use canned chicken (quick and easy), mayonnaise, and Mrs. Dash sodium-free seasoning. The result is a simple, refreshing chicken salad that is perfect for summertime!
Chop up your pepperoncini into very small pieces. Next, drain your canned chicken. (You don’t want it to be soupy!)
Combine all of the chicken salad ingredients in a large mixing bowl.
Mix it well! At this point, you can taste the chicken salad and adjust it according to your own personal preference.
All that’s left is presentation! Using a small spoon, scoop a little bit of chicken salad into miniature phyllo shells. Since the shells come pre-baked, that’s all you have to do! It could not be more simple!

- 1/3 cup pepperoncini peppers
- 2 cans chicken
- ¼ cup mayonnaise
- 1 tbsp Mrs Dash table blend
- 1 package phyllo shells
- Drain the canned chicken and put into a mixing bowl
- Chop up the pepperoncini peppers into very small pieces
- Add pepperoncini, mayonnaise and Mrs. Dash to the chicken and mix well.
- Spoon chicken salad into phyllo shells and serve on a pretty platter!
