Cheesy Provolone Baked Chicken

Looking for a way to dress up that package of chicken breasts in your refrigerator? We’ve got just the thing! This recipe for Cheesy Provolone Baked Chicken is creamy, rich, satisfying, herbalicious and –of course–super cheesy (in the best way!) It’s an awesome, simple weeknight meal whether you are following a low carb/Keto diet or just looking for an entree that will please every member of the family.

In addition to being totally delicious, this baked chicken recipe is pretty quick and easy, too! If you’re like me, you always have a bag of chicken breasts in the freezer (or refrigerator), but it can be a little daunting figuring out ways to prepare them differently (especially if you are pressed for time.) This recipe is great because it tastes thoughtfully prepared, but it really doesn’t require much effort to throw together.

Before you prepare your chicken, go ahead and preheat the oven to 375 degrees. Spray a 9×13 baking dish with non-stick cooking spray and place your raw chicken breasts (about 1 per person) into the baking dish. If you’re using frozen chicken breasts, just be sure to thaw them out completely, ahead of time. 

Now you’re going to prepare your own seasoning blend by mixing together salt, pepper, garlic powder, and Italian seasoning. (The exact amounts are posted in the recipe below).

Note: This is a good mixture to keep on hand and use for pretty much anything!

Sprinkle a little of the seasoning mixture (set aside the rest) over the chicken breasts and then top them with slices of provolone cheese.

In a medium bowl, blend together the rest of the seasoning mixture with the mayonnaise, sour cream and Parmesan cheese.

Spread this creamy mixture over the provolone slices, and place the entire dish into the oven. Bake the the whole thing for 1 hour, or until the chicken reaches an internal temperature of 165 degrees. Once your Cheese Provolone Baked Chicken is done, allow it to cool just a bit before serving. All you need is a side salad and dinner is done (I mean, you could even skip the salad!) Eat up and enjoy!

Ingredients

3 to 4 boneless, skinless chicken breast

½ teaspoon salt

½ teaspoon pepper

1 teaspoon garlic powder

1 teaspoon Italian seasoning

8 slices provolone

½ cup mayonnaise

½ cup sour cream

¾ cup shredded or grated parmesan cheese


Instructions

  1. Preheat oven to 375 degrees. Spray a 9×13 baking dish with non-stick cooking spray. Place chicken in baking dish.
  2. Mix together salt, pepper, garlic, and Italian seasoning. Sprinkle a small amount over chicken breasts. Top with sliced provolone.
  3. In a medium bowl, blend together the remaining seasonings with mayonnaise, sour cream, and parmesan. Spread over provolone.
  4. Bake for 1 hour or until chicken reaches an internal temperature of 165 degrees.
