Low Carb Sheetpan Meal: Bacon Wrapped Mini Meatloaf

Are you trying to follow a low carb lifestyle but looking for new, exciting meals that your whole family will love? This sheetpan meal is the perfect low carb family dinner! This recipe creates six mini meatloaves that are wrapped up in the delicious, rich flavors of bacon, onions and herbs. You’ll also come away with a delicious side of roasted veggies: green beans and turnips. Altogether, this is one hearty and comforting meal that everyone will enjoy.

Two things really make this low carb “meat-and-potatoes” type of recipe feel like it’s not missing the carbs.

The first is the substitution of crushed pork rinds for bread crumbs.  You need a binder in your meatloaf (otherwise it won’t fufill the “loaf” part of its name), and pork rinds really do the job (and add a little bit of extra flavor).

*However, if you follow a low carb and Kosher diet, you can omit the bacon in this recipe and use these nut crumbs as a binder instead of the pork rinds. They also work nicely.

The other thing that really makes this dish stand out in the low carb world is the roasted turnips. This is a a low carb lifehack that will change your life: roasted turnips taste suspiciously like potatoes. 

To get started on your meatloaf sheetpan dinner, preheat the oven to 400 degrees. Next, combine your washed and prepped turnips and green beans in a bowl.  Add in the olive oil, salt and pepper (the trifecta for all things roasted) and toss them together so that your veggies are nice and coated.

In another mixing bowl, combine the: ground beef, salt and pepper, egg, crushed pork rinds, onions, peppers, garlic powder, onion powder, basil and sugar-free ketchup. Mix with your hands until well combined.

This is not a complicated meal to make. It’d be a great one for kids to help out with if they enjoy working in the kitchen.  Even if your kids are young, they will love helping crush the pork rinds into crumbs or squishing together the meat mixture!

Once your meat mixture is combined, arrange your veggies on a large sheet pan in a single layer. However, be sure to leave room in the middle of the tray for the mini-meatloaves.

Form the meat mixture into 6 small loaves and wrap each one in two slices of  (uncooked) bacon. As the bacon and the meatloaves cook simultaneously, the beef will be infused with that delicious, smoky bacon flavor.  (However, you can skip this step if you follow a Kosher lifestyle. It will still be delicious.)

Place your baby meatloaves in the center of the baking sheet.

Now that everything is on the pan, you’re going to pop that pan in the oven for 40 minutes to bake, until the vegetables are tender and the meat is cooked through.  One of the things that makes this sheet pan meal so delicious is that all of the flavors have the chance to “marry up” as they cook.

The fat from the beef and bacon will combine with the olive oil that you tossed your veggies in, and all the flavors will combine to create a truly succulent and delicious low carb dinner that your family will love!

Description

This delicious, low carb sheetpan meal will make your whole family happy! Enjoy individual-sized, bacon-wrapped meatloaves alongside succulent roasted veggies.  This meal is the ultimate in terms of  low carb comfort food.


Ingredients

● 2 lbs. Lean ground beef
● 12 Slices bacon
● 1 c. Chopped onions
● 1 c. Chopped green peppers
● ½ tsp Garlic powder
● 1 tsp Onion powder
● 1 tsp Basil
● 3 tbsp Sugar free ketchup
● 1 Egg
● 1 c. Crushed pork rind crumbs
● 1 lb. Green beans with the ends snapped off
● 5 Turnips cut into small wedges
● 2 tbsp Olive oil
● Salt and pepper to taste


Instructions

1. Preheat the oven to 400 degrees.
2. In a large mixing bowl, combine the green beans and turnips. Toss with 2 tbsp of
olive oil and salt and pepper to taste.
3. In another mixing bowl, combine the ground beef, salt and pepper, egg, crushed pork
rind crumbs, onions, peppers, garlic powder, onion powder, basil and sugar free
ketchup. Mix with your hands until well combined.
4. Place the vegetables on a large sheet pan in a single layer. Leave room in the middle
of the tray for the meat.
5. Form the meat mixture into 6 small loaves.
6. Wrap each mini loaf with two slices of bacon.
7. Place the mini meatloaves in the center of the baking sheet.
8. Bake for 40 minutes until the meat is cooked through and the vegetables are tender.
